    As I mentioned above, I buy from two sources. The Amish market ($4.59/lb) or costco ($5.29/lb). At Costco, you have to ask in the meat section if there are any untrimmed briskets in the back. They look at you like you are crazy and ask "are you sure" several times, then someone heads back and...

    Looks great! I don't foil myself and I take to 200. I put an 8lb butt on last night and I expect of will be done at around 1pm. Last one I did looked like this. .. Congrats!

    6 am too early for this crap.

    I usually sleep while my brisket is going and set alarms for pit temp using the pittdoroid app. If I start at midnight, I'll usually add coals at 6am. I smoke at 225-230. It takes 12-14hrs to get them done.
