    Thanks Richie, no cheese here, tried to stay a little more healthy with this one. It's on top of a mango salsa puree to put some sweet with the heat of the jalapeno. Okie, I like where your heads at! It actually does grab my eye and bring focus to the meat.

    Hey y'all, First post, so be gentle. Found some Cornish Game Hens for a great price, and decided they needed some smoke. Right at an hour and a half at 300°. Nice crispy skin and a nice touch from the apple wood. Brined for 2 hours and juice was jumpin out after they rested.
