    Good deal, I got the temp at 250 and im at 185 now. I anxious to pull the foil and see what she looks like. Ill post and update.

    That makes sense, I have always smoked @ 230 and every time I foiled it was pretty wet looking on top. Shes foiled at 250 now, internal temp is 162.9. We got company coming out, I hope this is salvageable. Thanks

    How in the world is it cooler down south in July?? LOL Gonna use Dutch's beef brisket stickie, smoke to 170 then foil.....and I got 3 slabs of ribs in the fridge soaking in the rub to put on later. Sure gonna eat good tomorrow!

    After months of research, scouring the web and pouring through you tube videos, I FINALLY decided on the Yoder 640. Drove over 5 hours to pick it up and im extremely happy. Its 1:15 am here, and I got a BIG brisket on and am enjoying a few barley pops on the back porch.....its 68 degrees here...

     Thanks guys.....glad I wasnt the only one who had this opinion. And +1 million on the comments of how "we" can out smoke these world famous bbq houses....LOL....I can hear the kids saying DADDY your smoke is better....

    Yes Im placing the pecan logs directly in the fire. Im probably using 6-8 small logs during the 6 hours, the smoke is whiteish and I have a Smoke Canyon horizontal smoker, not my first choice but, Home Depot had it brand new, marked down from 500 to 200, so I bought it.

I did the boiling water test on my therm. and it was right @ 212 F. I then put the entire probe into the fridge for over a hour and the oven and food...
