    So after I got done smoking 2 beef chucks today still had plenty of fuel on the WSM so I threw 4 lbs of wings n drummies on Scarbelly style. They turned out great. Even the young ones loved them. Found my new go to thanks to this site.

    Threw on a couple chuck roasts for a get together later today. Rubbed with SPOG and shooting between 225-250 for temp in my WSM. The minions already know I've got the smoker going

    Good lookin birds. My goto is inject with creole butter and rub down with plowboys yard bird rub. I also don't bother with the beer. I just use the stands.

    I read on here the first few times they run a little hot that's why I didn't try to chase the temp so much. Lots of great info around here

    I did chicken just on the beer can stand with no beer for lunch on my kettle. Next time I'm going to try the spatchcock.

    Did some ribs today on my new wsm. Temp slowly creeped up and held right around 250 so I didn't try and chase it. 3-2-1 method ended up 3-1 then 2 min on a hot grill.     Hello All, I'm Travis from Illinois. Been following this forum for about a month and it's great. Lots of info on here. Got my wsm fired up with some ribs and already did a chicken on my kettle today. I'll make sure I post some qview later.
