I'm 90% sure I want to risk the wrath of my wife and go slightly over budget for this - Smoke Daddy Pellet Pro174 Deluxe Stainless Steel Pellet BBQ Grill - Model 1190
Here are my needs - 80% of the time I will be smoking for dinner for 2. 10 % of the time I will be smoking bacon, I would like...
My family does a pig roast every year, traditionally in a Caja China box. I find this cooking method rather bland.
So, I want to smoke a whole hog.
And since I am going to smoke a whole hog, I need a new cooker Right?
Thing is I don't know how large a whole hog is.
Does anyone know if there is...
Thank you for the reply. I was afraid of your answer. There are a lot of smokers out there, and I was looking for one that can burn wood, what is the cost entry point for one that is worth having?
Can you recommend one?
I just moved to Texas, and while smoking on my Weber Kettle made some good BBQ, I want to step up to an offset firebox. Though at this price point, "step up" may be a bit of a misnomer.
My local HEB has a Char-griller Smoking Pro on sale for $160.. I looked up some mods and for $30 or less I...
Better safe than sorry. I know my hardybacker is safe for use in interior spaces as a fireplace surround, so I believe I am safe.
I guess I will just have to wing the rest.
Did you ever figure out the correct opening sizes for your smokehouse? I was thinking about making one about 3x3x2 out of some sheets of hardyboard and some lumber I have laying around. Using a hot plate as a heat source and AMPS for smoke.
Thanks for the suggestion, I will start recording my cooks, which I have never done before. I assume you use these thermopens to monitor the temperature of the food, what is the best way to monitor the temperature of the air surrounding the food?
I have done the turkey the same way for...
This year I did not get home early enough to purchase or brine the turkey myself. My mom purchased a turkey from Fresh and Easy, and used an add salt brine mix. My mom insists the turkey be stuffed. I grilled/smoked the turkey on the webber kettle at about 325 for 15 minutes a lb. Basting...
Well, I figure if they can be used as a backing for a fireplace, which is inside a house, they must not off-gas anything toxic. And as long as there are no exposed fibers, I don't see how you could get any into your food. I have used 1/4 Hardie backer before, and even when it cracked...
According to the James Hardie company, Hardie backer can be used in a masonry surround of a fireplace. I would assume that this means it is safe to be heated to a fairly high degree.

I have a bunch of hardie board laying around from an aborted bathroom remodel. I would be very interested in seeing your build.
I was thinking about doing a double skinned thing with hardie board on the inside and thin plywood on the outside with an airgap in between.
I had not figured out...
A good place for pork bellies is the Meat Shop on 202 East Buckeye Road Phoenix, AZ 85004.
That is where I bought my bellies the last time I made Bacon. I don't remember the exact price, but 12 lbs came out to just over $30. And they will let you specify what you are looking for in a pork...
Hello all,
I am new to the bacon making thing. I have made about 10 lbs of Bacon once before the summer heat kicked in. As soon as it cools down, I would like to make another crack at some gourmet bacon.
I am looking for a recipe for Jalapeno or other spicy bacon. A friend of mine who is a...
