    maintain temp

    I have a 250 gallon horizontal propane tank that I made into a smoker. 24 x 24 smoker box with propane and wood.  The temp comes up fine and will hold at 250 degrees but then goes to 300 degrees. I 'm having trouble getting the temp to come back down or to maintain it at 250 degrees.
