    Thanks Chef Jimmy J, I started this butt around 6 last night and its currently at 199 degrees, it's been hanging there for an hour, the smoker's running at 240 degrees now. I was planning to pull at 5:30. so I should be ok time wise. Thanks again. Rick

    Sounds good, get ready for the stall. I try to pull between 200 and 205 degrees and had excellent results. It takes patience the first one I did I thought it would never get there, but boy was it good. We ate late that day.
