Bough this smoker from a neighbor rgar was moving. gave him $25 and dragged it across the street.
After another $50 investement and some elbow grease and I have a kickass off set smoker.
Brisket was abit overdone, the meat fell apart when I took it out of the smoker.
It was still amazing and the bark was out of this world.
I shreedded the Brisket, divided the meat into two aluminum tray and added BBQ sauce to one. the other I left Natural.
I put a stack of Hamburger buns next...

I have a 9 3/4 pound Pork Shoulder and will season it up tomorrow.

Do you think anything in your instructions would change using my off set smoker. I can dial in temps pretty well. Not sure if cooking time would change much.
