    Grilled some awesome chicken over a hot wood fire in the smoker chamber my Oklahoma Joe Highland. At first, lots of bad steel smoke coming from bottom of chamber and noticed finish all bubbled up. After fire burned down, was able to put chicken on. Any recommendations on how not to have bottom...

    Moved to Texas from Ohio 1984. First smoking I saw here was an old gentleman with Cabrito on the side of the road smoking in a metal box. I knew I was in the right place. First smoker was an offset and learned how to do Texas smoke. Went to a propane chip smoker...did ok. Went Pellet somoker...
