Up till now I have only ever done a single meat at a time on the WSM 18".
So I decided I'd just go for it and try THREE different meats.
Brisket, Ribs and Chicken. All 'at the same time' and ready to eat at 7pm (ish)

@Wade, I think the bit I screwed up was the length of time the beans needed to be uncovered on the smoker for.
I was SURE it said only an hour.
Next time, I will leave it on for 4-5, stirring in the 'crust' every hours or so.

I agree @John Trotter, It certainly hasn't gone to recycling.
Bagged it up (to keep it clean) and I am going to look into replacing the parts at some point.
