Thanks for the post and the thread. As a newbie to smoking I have read pro's and con's to soaking the wood. I do believe I will not try this. Or at least not until I have a lot of experience under my belt.
Success, today I smoked a 6 pound pork picnic roast. smoked it on the bottom rack where the heat is not as high, used apple wood chips in the smoker pan and 3.5 hours later a perfectly done roast.

Good afternoon everyone. My wife and I are retired and live in SW Florida. Got a charbroil gas smoker for Christmas, something I have always wanted so I got to looking and found this site and joined right up hoping to learn a lot from the masters.
