    Baby Brisket question..

I'm going to piggyback onto this thread because I have a similar situation and I was wondering how to cook it. Although a 7-9 pound brisket was available to purchase, there's only me so that makes for a LOT of leftovers. I settled for a small 2 pound brisket with plenty of fat left on. I'll try...

    3-2-1 question

I see a lot of references in the forums to the 3-2-1 method of cooking but cannot find a sticky explaining what the method is. Can someone provide a link please?

    First Butt, Best Butt

As you can see from the 2nd photo, it doesn't take long for a brand new smoker to look like it's been used for years. My wife didn't understand the purpose of the window because it was pretty much opaque once the process was done (profanity omitted to maintain the PG rating). I told her the...

    First Butt, Best Butt

Pulled the butt at 6:20, after 13 hours and 20 minutes. Wrapped in foil and towels and placed it in a cooler to rest for another hour. After that, I cracked it open and began to pull the pork.  I found it tasty and not dry but yet I think I was expecting more flavor. I noticed in some other...

    First Butt, Best Butt

My math was off. It was 10 3/4 hours at that point and now 12. Built in has been repositioned and reads 201. Second thermometer reads 185.

    First Butt, Best Butt

    So, I've run into a bit of a problem today and it concerns the built-in thermometer. Here are my internal temperatures/times: 5am - 40 degrees 7am 103 8am 141 9am 162 10am 173 11am 186 noon 194 - at noon I opened the cabinet and placed the baked beans into the smoker 1pm 194 2pm 197...

    First Butt, Best Butt

My MES 40 has reached the test temperature of 200. The secondary gauge I placed inside is reading right on at 200. The internal probe which is sitting loose in the unit is reading 218 (not sure if that makes a difference at this point or not).

    First Butt, Best Butt

I bought a 6.9 pound butt (bone in) at Whole Foods and have prepared it using Jeff's Naked Rib Rub recipe. My weapon of choice is the MES 40. Will be getting up at 3 AM to start the cooking and aiming for 5 PM dinner, if all goes well. Because of the comments I'm reading in the forums about...

    New chef on duty

I have a couple of questions to add to this post because I'm not sure how things work in the forums. I bought Jeff's rub, thinking it would be an instant download via PDF file or something. So far, nothing. Is this going to come by mail? because if it is, I have to change my plans quickly and...

    2012 Masterbuilt Smokers - NEW 30" & 40" Models!

I bought the newer version at Bass Pro because I had a gift card and the list price was $429. Sam's Club was selling the same model at $299 and Bass Pro was willing to price match as long as it was the same model and Sam's Club had the item in stock.

    New chef on duty

It was the newer model. Bass Pro had both on display at their store and the only difference that I could tell was the location of the control panel on the top, which has been moved towards the front.

    New chef on duty

My employees got together and bought me a $350 gift card to Bass Pro Shop, so my wife and I went shopping yesterday. They have a large, fairly new store in Denver and it was a sight to behold. I got the Masterbuilt 40" electric smoker upon recommendation from a coworker. Bass Pro Shop price...
