Thanks for the tip! Actually it will be cemented into those pillars, and a wall will go around it underneath. The smoke you are seeing is the last bit of seasoning.. I spent the last 2 days running smoke through it..

So far, the plan is to smoke 9 racks of baby backs, 2 whole birds (chicken) some gator tail (possibly) and I want to put a lamb roast on there, but my wife has other plans for that, so I'll have to try that another time.
Any thoughts on putting some clams in the smoker??
