    Roast was a big success. Brined it, dried it and then applied kosher salt on skin, and rub on inside. Took 7.5 hours to cook, then tin foiled it and kept it warm for 4 hours at 200 degrees on the pit. More details to come but thanks to all that helped me figure this out along the way!
