    So first time make some salami I know not all mold is good mold. But slightly curious about this. I used some B-lc-007 starter in the meat but didn't spray down the salami with bactoform.     How is the pancetta doing? I think I am going to make some pancetta as soon as my chamber is empty.

    New build need some advice.

    Just used a blue oil based paint we sprayed on then once it dried taped it off and just used a high gloss can of white spray paint. Originally I wanted to use auto paint but the quote I got just for the paint was like 300 dollars.
