I see a few posts for modifying my MES with a side vent with a 90 degree Elbow..does anybody have a opinion on this and what would be the advantage to this mod versus the original side vent? Just curious...
I used a analog oven temp in each of the 4 racks center position.. I let the MES get to set temperature and then set the temp guage..I allowed for 30 minutes at each position and it was pretty consistent..If i set the MES to 225 degrees it read 205..240 degrees was 220..I have adjusted my set...

I am a newbie as well in the MES world.. I have gen 2 MES 40 Elite smoker. My smoker unfortunately is the opposite of some members..I noticed it was taking alot longer to smoke my briskets and ribs so I bought analog oven temp gauge and discovered that my middle 2 racks are actually 20...
I noticed some of the new MES 40 Elite smokers have the vent on the top of the smoker on the left hand side..I have a earlier version where the vent is on the left hand side of the smoker. Any ideas on which vent location is better? I am not above relocating the vent from the side to the top...

I was wondering if anybody had ever added a couple briquets in with your AMNPS to help with a nice smoke ring on brisket or ribs..
I have read that the combustion caused by the open flame of charcoal helps with the smoke ring but I have yet to try this theory out..

I recently had the same issue with my 40 MES Elite..I looked inside the smoker and noticed I could not see the temp sensor in the back left hand side of the smoker..The entire sensor was covered in a thick coating of well earned seasoning..lol..i used alittle rubbing alcohol to clean...
Thanks for the help..I have been reading alot on the mailbox mods and this weekend i shall be joining that club..Any other tips you have for using the AMNPS or general smoker tips would be appreciated..
