    Thank you sir.  I guess there's still the oil to deal with, but if I don;t have to pump out a pot or try to pour it through a funnel, it's a win.  It's also a hell of a lot more likely to fit in my dishwasher, unlike the 10 gallon kettle I have.

    Not sure which forum this might go in so I shot low ... apologies if it belongs somewhere else. I've been frying turkeys for .. years.  More than 15 I guess.  The big issue is the mess.  You have to pump out the oil when done, or pour it and hope you don't spill ... if you have fried turkeys...

    I'm pretty proud of my cheesecakes and I see some similarities in my recipes and this.  One thing I have done for a long time to help prevent cracks is to bake with the pan sitting about 1/3 of the way in a larger pan of water.  With a springform you need to seal the pan in foil or something...
