    Figures i wouldn't get what i ordered. No one sells it in the store so i'd figured i would get the right thing from a butcher! Any suggestions on how to go about smoking these?

    It held it within 5-10 degrees the whole time @225 we see if it does the same at 325 when i do the turkey tomorrow.

    Did my first some on the sams club member mark (embers grills) 28" smoker i got yesterday. Did a brisket, been so busy i have smoked any meat in a while. Going to do a turkey tomorrow. So far i'm pretty happy with this smoke and the price $239.

    Here a picture done at 8:30am. I should have taken a picture of the other half it looked better. They are wrapped in foil and are in the chest for lunch. oh, i smoked at 280 till. The last 30min i took the water pan out and took it up to 350.

    Well it's 3am christmas day and i just started the smoke. Smoker is 44" wide.

    just halved them and they are in the brine (salt and brown sugar). Only going to smoke one of them putting the other in the freezer for a later day.

    First one of these i have done. done lots of chicken, butts, and brisket. I stuffed it with spinach and cream cheese wrapped in bacon.
