Billbo's world famous dry rub & BBQ sauce recipe's

I’ve been making this sauce for 5 years now, with my own tweaks to make it hotter. Add a can of chipotles in adobo sauce for a whole other layer of flavor!

Chef Jimmy J ! Should I dry brine?

I'm hoping Chef Jimmy J will chime in here.... I read an article by Kenji Alt-Lopez of serious eats, he is a food scientist.  He explained that brining doesn't actually add moisture to the turkey meat.  What it does is break some of the proteins in the meat so that it contracts less while...

    rub for turkey?

Hey all Thanksgiving is a month away and already I am salivating at the thought of a smoked turkey.  I smoked one last year and it was fantastic.  Trouble is, I can't remember what I used for a rub.  Maybe my go to rib rub, just can't remember. What do you guys use for a turkey rub?

Billbo's world famous dry rub & BBQ sauce recipe's

Thank you so much Bill for sharing these great recipes! I am new to smoking but I've been grilling all my life.  I made up the rub yesterday and used it on my first-ever smoked turkey and it was fabulous!  Everyone loved it. I brewed up the sauce today.  We like things hot here in New Mexico...

    Masterbuilt vs. Brinkmann?

Hey Y'all I'm still trying to figure out which electric smoker to buy.  It seems that most here prefer the MES, but I see a lot of posts about problems with them.  The Brinkmann's seem less expensive, but do they work as well.  Anyone regret the choice they made? Anyone care to share some...

Best deal on MES 30 or 40?

I have a Sam's membership so that's not a problem.  They don't stock any Masterbuilts but I suppose I could check and see if they can order one in for me. But now I'm having second thoughts about the MES and am looking at Brinkmans.

Best deal on MES 30 or 40?

I'm ready to pull the trigger on my first smoker, and based on all the chat here it will be an MES 30 or 40, don't really care which.  Anybody have a lead on where I might find the best deal?  When I use the Googlez I hardly get anything but Amazon, $289 for the 30". Any suggestions?  and Thanks!
