Hey guys! My name is joe and I'm excited and learn and share what experience i have with you guys.
I keep it simple, i use a 22 weber kettle and a modded Brinkman smoke n grill.
I like to add some new mexico flare with green chile powder rubs and local honey. Pork, beef, chicken, you name it...
There are so many mods to choose from but as a start, I definitely suggest adding some air holes to the charcoal pan as well as small grate inside the pan for the coals to sit on. That's I'll I've done and I've had some pretty good performance and results
