    20-25 minutes doesn't sound right at all. I have a 30" MES, base model nothing special. I use wood chips in the provided tray (until I get around to the mailbox mod) and a full tray will last me 2-3 hours easily with a medium heat, around 225-250 degrees.

    No consistency change at all, Jason. They got a shade or two darker, but that's it. Came out hot and crispy. Ran the smoker at about 200 degrees for the first 5 mins then backed it down to about 120 after figuring I didn't want them to "overcook". I'd definitely recommend it. I did some Swiss...

    Fresh kielbasa?

    I only like smoked kielbasa... Wife's family is Polish so, it's a staple food. We usually just boil it then serve it in chunks that you cut up yourself and eat with ketchup or whatever.

    Applewood smoked, 15 mins on top shelf of MES. Turned out phenomenal! Wood chips were still good and going after I smoked the country ribs...so why not?
