    Pitmaker vault

Thinking about selling the vault, just not using it enough. It’s located outside Houston, Tx and trying to see if there is some interest. Thanks Michael

    What temp for smoking jerky?

Might need to put a warning on that Thai jerky recipe for the people like me that have never used fish sauce. It like to knocked me out. The only problem I had after a few days it was like the jerky was leeching it and getting sticky in the fridge.

    What temp for smoking jerky?

I have my cyberQ that I am going to use to control the element. Hopefully I will have better control on the temps but we shall see. My vault is reverse flow upright and last time I ran it like I normally would for q but had the controller turned down and not a lot of coals in the firebox. I was...

    What temp for smoking jerky?

Thanks Chef JimmyJ and sorry if it was not enough info to give a clear answer. If I have known what to do I wouldn't be asking questions. Electric heating element

No I just want to use the electric part for when I do jerky to keep the temp down. Its a Pitmaker Vault that I use when BBQing but it doesn't like to run under 225-230. Thanks

    Electric heating element

I am looking for an heating element to use in my vault to try to get the temp down. I ran across a post that had one that I like from Cabelas but I can't find it on there site. Any ideas where to get one like this, I like having the plate on the bottom.

I haven't made jerky in many years, but it's been to long!

Well here is the finished product, tried to keep about 180 but it was at 220 some time.

I haven't made jerky in many years, but it's been to long!

Ok got my cure #1 today and planning to do this weekend. I thought I would try the Thai and pepper (http://www.smokingmeatforums.com/t/82503/pepper-jerky-hot-pepper-jerky-seasoning-recipes) but it calls for 3Tbls tender quick cure....I can just use the cure #1 in place of it at 1tsp per 5 lbs...
