Summer Sausage. How long to cure, ferment, bloom??

I know this is old - but I would like to add to this for the OP or other searchers.  I just finished reading "Charcuterie", Rulhman and finished my first batch of about 10 lbs.  (Qview and thread coming soon).  I think I can simplify your method a bit: Here is the best I can gather for a...

Venison Jerky - Smoker & Dehydrator?

I have my venison ground, I have my prague powder, marinades and spices.  I have my Weston Jerky gun and my Nesco plastic dehydrator.  I want to utilize my smoker to get the hickory smoke flavor so I am wondering if it makes sense to use the dehydrator first to get the ground jerky somewhat...

Thanks! Just noticed you have one of the Char-griller Kamado smokers.  I saw one of these a few days ago and instantly stopped and wanted it.  I had to walk away! How do you like it?  I am no expert, but I have been very please with how much bang for the buck I have gotten with Char Griller.

Thanks to all for my warm welcome.  I'm actually about to attempt to trap some wild hogs at my dad's place, so I may be doing some research here soon about their preparation and consumption!
