So you used the same recipe as the Italian for your snack sticks? Only difference is the smoking process, casings...? I haven't seen anyone reduce the heat back down to dry snack sticks. Sounds like a great idea.
I just started by getting the Hakka 7 lb stuffer for a fairly cheap price. Also bought a MES40 electric smoker on sale at Menard's for $225. So far I've bought ground beef/pork from a local butcher until I get a grinder. It's worked very well so far. Super fun hobby.
I used heavy whipping cream on my initial batch of links and felt like it created too much of a creamy taste. Maybe the dry milk and whipping cream was too much. I think I'll use water next time.
