					About 35 years ago, I was in Norway Salmon fishing, I was so impressed with the way they smoked their salmon, I took photo's of the smoke house and replicated it in Rhode Island. It was a walk-in smoke house built into rock ledge, the smoke box was outside the house using a Vermont Casting Stove for the smoker. The control was excellent for cool smoking, (abundant amount of blue fish/ Spanish mackerel and tautog fish and deer meat for sausage). Now that we move (retired) to Florida I know it is extremely difficult to cool smoke, due to our high temperatures. I just purchased a "Smokin-It Model #2 , looking forward to smoking (warm) . Would love to meet other members who have experience in Florida smoking local Gulf fish.
