    Definitely. You don't even have to rewire, you just need a computer power cord that goes from the PID to the back of the chamber. If you have the original 500w heating element, find one that is rated for 10A or more (it will be molded into the plug or labeled somewhere.)

    How about laying the slices out on a few racks and smoking them only for 10 minutes or so, rotating them through until you have done them all. That way the entire surface gets smoked, rather than relying on the smoke to migrate through over weeks or months. Also, you can taste the first ones...

    If you can, measure the voltage at the outlet while you have the smoker plugged in. There may be voltage drop in your house wiring.

    I'll accept that thermisitors are not commonly called RTDs. But, a PT100 is 100 ohms at 0C, and a PT1000 is 1000 ohms at 0C. So, they are not interchangable.
