    Thanks for the invite and hello from Clarion Iowa. I haven't been on this site for a while now, but plan on using this more and more now. Didn't get much smoking done this year but plan on using my smoker much more, hopefully even through the winter.

    Smoker Cleaning Question

    I always clean my racks, but before using them, I spray them with a bit of PAM or some kind of cooking spray. When done smoking, I put them in the sink with hot water and dish soap. I can usually just wipe them off and they come out very clean with little effort.

    Not sure what to tell you about the ribs. I use a MES30 also and have been happy with the results so far.     MES and AMAZEN

    I was going to try to smoke some cheese today, but the weather here didn't cooperate. I will probably be getting a seperate thermometer for a back up if nothing else. I have a thermometer I will stick in through the vent to monitor temps in the mean time.     As long as the MES doesn't heat up...

    Need Boston Butt Injection

    I totally agree. No need for injection. Spray with CPT Morgan and apple juice and double wrap in foil when it hits 160. I did one last weekend and it turned out to be one of the juiciest pieces of meat I've ever had.
