    Is this gap bad and what mods horizon smoker

    I have a Horizon Smoker that has a small gap like yours. The Horizon with the 1/4 inch steel holds heat so well that the small gap does not really cause A problem since you need a little air to get through so the fire does not go out. I left mine like it was and it is an awesome smoker.

    I wrap with Butcher Paper on Briskets and Pork Butts. They turn out super moist and the butcher paper lets them breathe so you have a better bark.

    Anyone do Overnight Smokes?

    I smoke for 8-10 hours on my Horizon Smoker to internal temperature of 160-165 degrees. Then wrap in foil in put in refrigerator.     Charcoal ash choking my fire

    I have a Horizon 16 inch Offset Smoker.     Mc Cormick's Monteal Steak Seasoning

    I love the Montreal Steak Seasoning. It is my favorite seasoning for ribeyes, brisket, and burgers, and I even love it on smoked chicken. I have not tried it on pork yet.I tried the Weber Chicago Steak seasoning and like the McCormick Montreal Steak seasoning the best.
