    Gas moker build questions

Hi All, I've been wanting to build my own gas smoker for some time now and have got alot of great ideas and information from the folks at SMF. I would like to find out how to build a gas smoker that is controlled with a thermostat.  What type of gas valve, thermocouple, pilot light or ignition...

What is the preferred wood to use for cheese?

I like all the fruit woods and Peach gives it a unique finish that many of my friends like.  Apple wood is always a safe bet.  As for time, I cold smoke for 2 to 4 hours depending on the type of cheese.  Havarti and Mozzarella are pretty soft and take the smoke quickly so I tend to only smoke...

Need Help with Masterbuilt Gas smoker thermostat mod

I know I've seen a modification to a gas smoker where a pilot light, thermostat and gas valve were added to better control the temperature.  Seems like a LP gas water heater or LP gas oven valve, thermostat, thermocouple and pilot light was added.  It's a hassle trying to control the temperature...

New to the group trying to make bacon that doesnt taste like ham

Thank you for the replies and feedback.  I love the ham taste but the wife wants more of the store bought taste that we are accustomed to.  I will try some of the tips. Any place other than a butcher shop to get port bellies?  What is the price range? Thanks Todd

Hello everyone!  Hope your TBS is rolling this weekend. I have made Canadian Bacon for a few years now and everyone loves it.  But I would like to make traditional tasting bacon as well.  I have some Buckboard Bacon resting in the fridge that was smoked yesterday. I used Morton TQ with a little...

The old MES is really getting a work out this weekend.  Smoked 15 pounds of Buckboard...

    Canadian Bacon by SQWIB

Great recipe!  Thank you for the post.  I just tried CB for the fist time and it came out delicious.  Even my youngest daughter ate it, even though it came from Indiana and not Canada.

GOSM BB and Masterbuilt XL in Stock

Don't be afraid to get one.  I bought the Masterbuilt XL propane about a year ago from BPS.  Look at the forums for mods for this unit.  It is a great unit but you definitely need to 1) use a cast iron skillet for the wood chips/chuncks  2) get a bigger drip/water pan,  and 3) upgrade the...

CB brine leaked out of the bag

Yes I lost most of the liquid by comparing the other 2 bags, but there is still some after I re-bagged it.  I was my fault (used cheapo bags).  Wife wasnt too happy with the mess in the fridge.  Live and learn

CB brine leaked out of the bag

OOPS..I have 3 pieces of pork loin for Canadian Bacon that has been in Tender Quick and brown sugar for 3 days and I noticed that one of the ziploc bags had leaked out most of the liquid that formed after applying 3 tbsp of TQ and 3 tbsp of sugar for a 3 lb loin.  My question is should I add...
