I am in the same boat as not finding the right combination to duplicate the fine Chinese flavor. Have to drive 60+ miles to find a good Chinese restaurant so reserve the Chinese dining to those occasions when other business takes us in their area. Can replicate but never duplicate.
Check out Cookie's Sauces. Has lot of different flavors but not sure how wide an area is covered. Mostly Hy Vee and Wal Mart stores in the MidWest carry them. Can order a box of several different flavors and they usually throw in 2 or 3 extra bottles to fill the box rather than having a bunch...
Your right, but not into chicken thigh sandwiches. I'm old school, like to clean the bones off. Use to eat a lot of chicken feet when I was kid back in the 40's too. Wonder how that would work on a grill or smoker?

Haven't seen shrimp fried rice in ages. Mighty good looking food fit for a king. Ate a lot of authentic Chinese Shrimp fried rice when I was in Spain. Want to try some paella one of these days.
Did ours a couple days ago, like last Sunday I guess it was. Carolyn picked up some light rye bread that is good. Not into the dark rye. Smoked for a couple hours first then brought it up to IT of 205, then let it rest wrapped for an hour. Quick shot in the nucker and made sandwiches...
I have one that my mother used back in the1930's & 40's.
Reminds of the farmer that retired and moved to town. He said when I was in the country, we cook the cabbage in the house and went to the bathroom outside. Now we cook cabbage outside and go the bathroom in the house.
I have only won two things in my life. A 45 rpm record at a school sock hop and a grease gun at John Deere days because I put the teachers name in rather than mine. Gave the gun to the teacher as we skipped his class.
