Ok guys been looking into an MES40 smoker but couldn't find any local dealers so I contacted Masterbuilt directly and they are going to sell me one and ship to me. The rep I talked to suggested I google both the part numbers above to decide which smoker would best suit me. from what I can tell...
I'm not sure exacty what flavouring was put into the sausage. he just brought 10lbs of meat, along with the bacon and cheese to a butcher and told him he wanted original sausages made with his own ingredients.

A buddy of mine had made some sausages using 10lbs ground beef, "original" flavouring, 3lbs bacon, and a 500g block of cheddar cheese. They were great!

Thanks! been doing some reading and I think I'm going to go with an MES40, provided I can find it here in Canada. The only place I can find MES smokers online in Canada is at Home Depot, and they only list the 30' model.
