    struggling with temps

I don't know much about offsets. I've built a few insulated drums but never built, cooked on or used a traditional offset. I do have an offset Brinkmann in the back yard that's "on the list" but it was given to me and I've never lit a fire in it. What are you using for fuel? (charcoal, sticks...

    wireless thermometer

Our experience with the Weber stuff is similar. It works great when you are close but small range and in the winter time it burns batteries like crazy. The weaker the battery gets, the less range you have with the Bluetooth and it also isn't great on cell phone battery life. Other than crazy...

Meatloaf wrapped in bacon: Bacon never seems to cook

Thanks for all the replies. No I'm not really looking for crispy bacon like you'd have with bacon & eggs in the AM, but I am looking for a little bit of the fat to render away. I don't need crispy, I just want the texture to seem like it's cooked.

Meatloaf wrapped in bacon: Bacon never seems to cook

We built two UDS a few months back. Mine is a Gateway/Hunsaker clone, hers is a Weber Bullet clone. She loves her damn water pan and I'm not going to argue with it because I've got mine and she's got hers :) Honestly other than helping her weld/build the smoker, I haven't messed with it or...

Meatloaf wrapped in bacon: Bacon never seems to cook

As the title says, we do meatloaf wrapped in bacon on Weber bullet clone a few times a month. Meatloaf always turns out great but the bacon never seems to cook. We cook probably about 2 pounds and we've gotten really good with temps, usually we cook about 265-ish until internal is 160. We do...

    Double Wall UDS

It's holding up great! I've made three drums and I feel like I'm starting to find a sweet spot for a competition style drum. Everything is a tradeoff in life. Each of the three drums are slightly different and have different pros and cons which has been a really cool/fun learning process. One of...

Copying is the greatest form of flattery

Anyone have any thoughts on making hot & cold spots inside an UDS?

Anyone run a barbecue restaurant or trailer/truck?

Well. Owning a brick and mortar establishment is hugely different than owning a mobile catering business. Hugely different.

    My UDS builds

Yep that's what I meant. I have a bunch of welding machines and metal fabrication stuff... Lincoln Weld-Pak 100 (no gas), Weld Pak 140 (gas), Miller 350P (wired for 208Y 3 phase) and a Lincoln 255. Always curious to see what the competition has! :) Your stuff looks good!! I'm a total...

UDS pan or no pan for drippings

Interesting so many 'no pan' votes. I'd think you would at least want a diffuser plate right?

    Think I screwed up

Question: Can you notch the cook grate slightly so you don't need your extra set of holes? Or, it may be a little bit of a pain but to get to the lower grate, can you drop one side down lower than the pins and then bring the other side up so it hits both upper pins? Does that give you enough...

Anyone run a barbecue restaurant or trailer/truck?

Two of the guys on our comp team are chefs. (they went to school to cook) We just did our second catering event last weekend. He just created an LLC and made it legit. I've started (and failed) a lot of businesses. Happy to share experiences. Like I said, out of the 4 of us idiots, two of them...

    My UDS builds

That's super cool! I'm doing a UDS out of a Total oil drum. I liked the color, logo... and stickers on it are same weight oil my car uses. Nice to see someone welding too!! I took two barrels and did a double-walled, fully insulated drum. Well... It's getting there. I've been a deadbeat and not...

Help.......! In search of a AMERICAN built smoker barrel

Google "$50 no-weld UDS build". Just spend the extra money to get an 85-gal food-grade drum.

    UDS rack bolts

I'm using (non-threaded) round stock and welding it :) It's probably the length and the hex head that is getting you. You can get them in screws --Phillips, flat head, maybe allen or even square/robertson, etc.) but a proper hex cap bolt will usually have a non-threaded shank at 3". Just use a...
