Your thoughts please

  1. Good morning guys and gals, Merry Christmas to you all.

    I have High Mountain Summer Sausage kit.  I made some bacon the other day.  I was thinking of using the trimmings in the summer sausage, has anyone ever tried that?  Also would there be any bennifit to adding NFDM, dextrose or soy powder to the summer sausage.

  2. The trimmings will be fine. I don't add the powders to my sausage. Some do.

    I Put NFDM in my S/S and snack sticks and can tell they do come out a little more moist. Good luck and let us know how they come out.

    NFDM addition is like asking how is the best way to cook a brisket! :biggrin:

    My suggestion to you, and others, is to experiment! Do a 5 pound batch, split it in half after mixing everything in, and then add NFDM to one batch and not the other. Smoke/cook them side by side, and then see which you prefer....

    As for the bacon, oh hell yeah!
