Looking at buying a yoder Wichita to maximize my surface area for smoking. The wsm is too tiny and the offset seems like the better way to go. Anyone have experience with a yoder smoker? Or what can I expect when going from the wsm to the bigger yoder?
 
My father-in-law has a trailer mounted Chisholm model from Yoder.  We do alot of cooking on that smoker and I can say that you would not be disappointed in their build quality.  Once you get used to cooking on the offset I'm sure you would like it.  I've looked at the Loaded Wichita model myself but just can't see that I would use it enough with his around although it would be nice to have a smaller model right in the backyard whenever.  I would recommend at least adding on the heat management tuning plate if not stepping up to the loaded model completely, the Chisholm holds very even temps from end to end with that add on.  One way or another they are great units in my experience and were great to deal with as well.  Good luck!
