Hello everyone,

My name is Eddie I'm from Hollister CA. Been grilling for 20+ years and smoking for about 5+ off and on..Got a chargriller w off set fire box. In the process of wanting to make a 30in. diameter 7ft long trailer smoker. Can't seem to find a pipe with that diameter. Any leads shoot them this way. I have a competition BBQ team named UP IN SMOKE BBQ. We competed for our first time in Gilroy at the Gilroy Rock n Ribs contest on the 21st of June. We placed 20th overall out of 30 teams and almost all were PRO's. I think we did OK. We learned alot and I know we will not be able to compete with the KCBS PRO competitions just yet. There is a State Championship in Fairfield,CA later in August that we will enter but in the amature level. Its not that were scared by any means, we need bigger smokers and the team I assembled of friends and family (5 total) are new to smoking so I'm teaching them as I'm learning more. Also drinking large amounts of BEER the night before does not help. That is what happened to us at Gilroy and we were feeling like dogs the day of the competition. But we kept on DRINKING, SMOKING, EATING and had a blast.

This forum is great and I already got new tips. I smoked some spare ribs last night for dinner and used the 3-2-1 method and ribs came out MORE TENDER!!!!
 
Welcome Purosmoke. That beer thing can make for a lot of fun. On the flip side it can cause pain. Been there myself. Wanted to hand it to ya for taking the challenge of a big competition. Great job. Lots of us here are to chicken to jump out there. Good luck in amatuer div.
