Getting the ribs ready to go out on the smoker. Now yesterday Seattle had some of the worst weather you could imagine. When I was getting ready to put these on, we were having a torrential rain storm with 30 to 40 mph wind gusts. During the smoke we had rain, wind, hail, more rain and wind. So basically a normal Seattle winter. I think I had to change cloths twice from being out in the rain while tending the smoker. And the smoker is under cover. But the roof doesn't help when the rain is coming sideways. But in the end it was all worth while. They were tasty and my guests loved them. I served them with my own Carolina sauce on the side so if you wanted some you could add it. They didn't need it but its always good to offer options.
