Yes, another first brisket

    I always wanted to try a whole brisket and with the new posts lately I figured now is the time!
    Got an 8.5# one at GFS. I only took off about a half# of fat. Rubbed it with my own rub and a little CBP.
    Fired up the smoker and it went in at 8:00am
    The 'Griller seems comfortable in the 270 range, so that's how we roll today. Nothing but Hickory...
    I figure I'll flip it fat side up and stick a Maverick in it at 4 hours...

    Ok, turned it @ noon.
    Aint that purty!
    Already at 160IT. I think I'll take it to 170 before foiling if I foil at all....

    Lol. Mine hit the wall at 166 today. But I didn't make any of Dutchs beans to occupy my time. I should have thought of it!

    I'd planned on getting one @ Costco, but the promised shipment didn't come in. As I was dejectedly leaving I saw a GFS sign across the street and gave it a try. They had a shelf of them from 8# to 14#. I swear I heard an Angel Choir...

    I made them up yesterday because the last time I made beans while smoking I lost track of time and lost the fire!!

    Anyway, I foiled it at 175 @ 3:00. Bumped the heat up to +-300 until the Maverick said 201 and an instant read said 106. (?)
    That was at 4:15.
    It's residing in the kitchen now until I can't take it anymore and have to unwrap....
