That is quite possible!  I have another one in some brine right now, going to toss it in the smoker tomorrow.  I'm going to try some applewood....not sure how it will turn out, but there is only one way to know...
 
Terrific looking chicken. I think poultry takes smoke almost as well as pork. Well done.

Don't forget the pellicle. If you can't let it sit uncovered in the reefer over night, at least set the fan on it for 30/45 mins. after patting dry tomorrow before smoke. The pellicle makes that beautiuful color even deeper.

Don't forget pictures, no smoke for me tomorrow so I'll need a fix.
