Got the bird in the brine for a nice over night bath.

    Brine

    1 1/2 gallon water
    1/2 cup Kosher salt
    1/2 cup light brown sugar
    A dash of garlic powder
    A dash of onion powder
    One split orange

    More pics to come soon.

    Have fun and happy smoking

I just threw 7 birds in a brine pretty close to this recipe. I can't wait to get mine on the smoker tomorrow. I'm looking forward to seeing your qview.

    Update

Bird out of brine and rubbed down
    [IMG]

Letting the bird come up to room temp so I headed out to start the smoker.

Smoker is up to temp time to put the bird on
    [IMG]

About a 1 1/2 hours in and the bird is looking good
    [IMG]

2 hours and internal temp was 160F pulled bird of and foiled for a nice rest

The bird was not for this dinner so no money shot sorry. I did have a lot of coals left so I tossed on a chuckie

About 2 1/2 hours in and looking good [IMG]

Now time to toss back one of these and watch the race [IMG]

Thanks for looking. Have fun and happy smoking :)

I should have added that it was smoked over Royal oak with cherry wood .. And I had a smoker temp of around 300F and the skin turned out great..
