X-mas turkey

  1. I will be smoking a 12 pound turkey on Tuesday or Wednesday, and will be bringing it to a family Christmas to eat on either Thursday or Friday. Anything particular I should be mindful of considering the delay in cooking to eating, or any tips anyone have in transporting it or caring for it post smoking to keep it fresh?

    Smoke it the morning you are going to eat it... wrap in foil and towels and keep warm in a preheated ice chest... preheat with hot water...
