WSM on the way!

  1. I have a 22" WSM on the way!! Should be here tomorrow. I originally ordered and received an MES 40 but it didn't work when I assembled it...sent it back and had a change of heart and decided to stick with charcoal. When I put it together, should I season it or just hit the ground running with some lump charcoal and chicken halves (some hickory too)? I'm going to follow the Low and Slow book by Gary...
  2. Also, should I just order a stainless steel replacement door for it right off the bat?

    I would use it as is for at least a few smokes to get used to how your smoker runs before deciding if you need to make modafications. I have just used the stock door with no problems for over 4 years.

    You're much better off with charcoal for taste vs cooking w/ coils...Congratulations and enjoy!
