Hey Everyone...just assembled my Weber Smokey Mountain Cooker last nite and can't wait to try it out this weekend.  My question is this...can I just give a good cleaning before I smoke our first meal or do I have to fire it up once without cooking anything to burn off any residues etc???  I never thought about that but someone mentioned it and I thought I would ask.  Thanks! 
 
Congratulations on the WSM, your gonna love it. You can just clean it and smoke on it right out of the box, spray or oil the grates and you are good to go. No need to season like other smokers. However many like to do a practice burn to learn how to dial in the WSM and get an idea on temps and fuel usage. The WSM tends to run hot for the first few smokes until it gets some smoke residue and settles down. Don't forget to share some pics.
 
I know it is not needed, but I wiped down the whole inside of mine with cooking oil & fired it up. Like shooter said it's a good way to get a handle on temp control. Also if you have a couple of probes, put one on each grate & you will get an idea of the temp difference between the 2 grates & the factory therm.
