    Just wondering....after you folks apply your rub do you wrap the meat to a pan.....or do you just wrap it by itself?

    I just put the rubbed meat in a ziplock bag and into the fridge for the night.

    I season and then throw it on the smoker. I used to season a day before but really found there wasn't much difference in flavor doing it right before. When I did season the day before I wrapped in Saran. Usually don't have room in the fridge for a pan.
