The last pork butt I did (my Avatar pic) I smoke 2:1 cherry to hickory mix along with cherry dr.pepper injection and in a pan in my smoke chamber. The pork came out amazing I've had really good luck mixing fruit wood with hardwood.  I use a 2:1 ratio because fruit is less overpowering then hardwood ( hickory,oak,....)

Hard to go wrong with any of the fruit woods.  Personally I really like hickory too, but some of my family think its too strong, so I've been leaning heavily to apple and cherry lately.  They tend to be more mellow.

I've used a ton of pecan and apple mixed. It ends up awesome every time. Just make sure youre going low and slow. I always smoke between 225 and 250. It gives the pork so much more flavor if you have the time to smoke for an entire day. Just make sure you have plenty of beer! Lol
