Over the weekend I had a failed attempt at ribs. I might have over done the smoke and so I ask this question. How many chunks of wood do you typically place in your smoker over the entire rib smoke? I smoked with red oak and mesquite starting off with about 6-8 chunks and then a couple hours later once the smoke started slowing down I put 2-4 more.

Good smoke on right.  It will all depend on the size of your chunks. I usually have no more than two to three depending on size. Usually about 1/2 size of you fist or smaller. You can always add more when needed, but start cutting back some when meat internal hits 140º. Also, more oak than Mesquite.
