I'm trying my hand at the scarbelly type wings and a BBQ bourbon wing.

First the scarbelly

I injected them with a mix of sriracha and butter. Then I rubbed them with a bit of buffalo wing rub I found.

To go with the wings I'm going to slice some cucumber and a homemade sesame dressing

Next up are the bourbon wings.

I marinaded them in water, bourbon, apple juice, brown sugar, salt, bay leaf and juniper berries. Then I rubbed them with my homemade BBQ rub

At the end I'll glaze them with a bourbon glaze I made

The wings are going to be smoked at 250 to 300. Although it's going to be tough because of the cold temp... I'm using a mix of pecan, hickory, apple and bourbon barrel pellets in my tube smoker
