Besides doing some smoked Salmon this past weekend I had to do some of Jeff's honey glazed chicken wings in order to feed a party boat full of hungry fishermen and women.

Here's the wings resting with olive oil and Jeff's rub.

Into a couple ziplok bags they went for 2 hours. I then added a buttermilk/kosher salt mix to each bag and let them sit another 4 hours. Removed from the bag, lightly patted them with a paper towel and them coated them again with Jeff's rub on their way to the smoker.

In the smoker running at about 225 for about 1.5 hours using hickory pellets.


Cooling down getting ready to be consumed by the wife :yahoo: and whatever was left was bagged for the fishing trip.

Thanks everyone,

I served a whole smoked Salmon filet that I had caught a week earlier off the same boat   That plus the wings were a major hit.  The kids on the boat really dove into them wings.  Made me smile.
