I would like to try curing some turkey legs and then smoking them.    I plan on using a dry rub with Cure # 1.   I will use the legs to season beans.     Thank you for your help.
 
Yes, just make sure to add any cure that falls off into the bag.  Immediately a dry rub cure starts drawing moisture out of the meat and mixes with the rub, which in effect forms a brine, so it is brining the legs which permeates through the skin with no problem.  Turn them every day so the cure keeps curing evenly.
