I had a local make me some wild hog sausage off of a couple pigs I harvested, at what temp would you consider it safe to bring it to? I have been over cooking it for fear of not killing all the nasties.

If I remember correctly, 165 is the recommended IT for wild game.....    for wild pigs, I think it is recommended to freeze below 0 deg F for a time period of 30 days to kill bad stuff....   My memory can falter but I think those are good numbers....     Dave

Perfect timing, sausage is in the smoker now. I decided to take it a touch over 165. It's been frozen for months, so all is good.
