Howdy,

New member From Colorado.
Most of what I will smoke is wild game. Elk, moose, bear and antelope in the freezer at present that are headed for the smoker. Along with beef ribs and chicken.

Doing beef ribs in a couple hours...

Just picked up a used Traeger Texas elite. Been 15 years but used to use neighbors Traeger a lot with pretty good results. Just now refiguring out best approaches for smoking meats including wild, very lean meats.



Looking forward to exchanging ideas and learning from the gang on here.

Ribs just about finished. Home made dry rub of various spices, Sorta used 3-2-1 cooking method. Brushed a little homemade BBQ sauce on toward the end. No pic of the other items but also did a spatchcocked chicken and a big elk steak rolled into a roast . Maiden voyage on the Traeger.
